Global Food System

 

 
A food system is a type of supply chain system that is composed of the relationships among food producers, food manufacturers, food wholesalers, food retailers, restaurants, and consumers. The course will study the structure of this system, changes in the food industry, changes in consumer consumption patterns, etc. A comparison between Japan to the overseas and sustainable food system is also studied. This lecture uses games and system design thinking to learn about food systems.
